How the octopus we sell is selected

There are two areas in the world that stand out above all others for octopus fishing, Dakhla (Western Sahara) and Nouâdhibou (Mauritania), where the quality of their waters helps the abundance of the species.

Octopus fishing in these areas is carried out two metres from the coast, in a traditional way, using pots and no other methods.

Once caught and auctioned, the octopus is selected one by one, checking the firmness of its flesh and its size, and then frozen.

The selection and freezing determine the quality of the octopus, with Japan 1a, the maximum, being the octopus that has been fished in a traditional way, with firm flesh and quick freezing, which guarantees the best preservation, done for 24 hours at -34 degrees Celsius.

Ways of cooking octopus legs

Frozen product that must first be defrosted in the refrigerator. Here is how to cook it:

  • Microwave: cut the octopus into pieces with scissors when cold and heat for 2-3 minutes. Salt and season to taste.
  • Bain marie: heat the octopus in the bag for 2-3 minutes in a bain marie. Then cut the octopus into pieces and season.
